I am in Canada on a working holiday open work visa and am getting married to a Canadian citizen. I have spoke to the immigration call center a couple of times and have two different answers.

From the last call my understanding is provided I apply for an open work permit with my sponsorship forms before my current visa expires I will be granted, "undisclosed status" and can continue to work (after my current visa expires) until first stage approval is completed and hopefully the open work permit will be given to me.

Is this correct?

Thank you

Yes, that's correct.

It's called Implied Status or you may look for Deemed Status.

As long as your application for extension on work/study permit is in BEFORE they expired, you are good to go.
